Granola & Chocolate Chips Cookies #2

The first batch of granola cookies were given the thumbs up by friends and colleagues, so here’s batch no. #2!

A few minor tweaking of the original recipe as listed below:-

  • Omitted white chocolate and used a total of 300g mini dark (55.5%) chocolate chips
  • Divided each cookie into 11 grams portions to make bite-sized pieces for feeding more mouths 
  • Baked at 175C for 15 minutes or till sides are golden brown

11g per cookie. They’re about 3.5cm in diameter.

My hands were so tired after the whole batch was done because 460g of flour is indeed alot of batter. It was worth it though, to see the cookies disappearing off the pantry by the end of the day. There were mixed reviews on the level of sweetness as with many desserts, hence if you’re someone that prefers little or no sugar like myself (e.g. one who drinks Koi bubble tea or soy milk with 0-25% sugar), I’d suggest reducing the amount of sugar by 10-20g. It’s also important to note the sugar content in your choice of granola and chocolate and adjust the brown sugar accordingly. For a reference, the granola that I used contains 10.2g of sugar per 100g.
